Brassica oleracea var. botrytis L.
Regional variety from central Italy with round heads and a light green colour.
Cauliflower originating from central Italy, which comes from the province of ‘Macerata’. From there, this variety has spread throughout Italy and has become increasingly popular. Even when cooked, it does not lose its beautiful, fresh light green colour. Rounded heads weighing up to one kilo are formed, which, in contrast to classic cauliflowers, are much rounder and less pointed. The heads of cabbage are surrounded by dark green leaves with light-coloured veins. With a purple cauliflower, a white cauliflower and this green variety, you can almost recreate the Italian flag.
